The main character in Theo of Golden by Allen Levi is from the Douro Valley in Portugal. So when I was deciding what cocktail to make for the Theo of Golden podcast, I naturally looked for something that utilized Port. I settled on the Passion Fruit Porto Sour for a couple of reasons. 1) I like sours, 2) I liked the idea of a drink that had the word "passion" in it, because the character of Theo had such passion, 3) the drink has a golden color because of the combination of passion fruit syrup and white port. The result was a delicious (and beautiful) cocktail. See recipe below:
1 oz White Port wine (e.g., Fonseca Siroco)
1 oz Gin
.75 oz Fresh lemon juice
.75 oz Passion fruit syrup or purée
1 oz Egg white (about 1 egg white)
Recipe: Dry shake all the ingredients, then shake again with ice. Strain into a chilled coupe.
